Day 198
Most of you know that I am the one primarily responsible for the dinners in our home, especially since my wife's business helped me retire from teaching to stay at home. Recently, my family decided that the regulars, as far as dinners go, were getting a little too routine. I got hints, like, "Again?" and "I don't like that," when yesterday they liked it just fine.
I cruised the internet for recipes, borrowed books with recipes, visited libraries and coffee houses for books with new recipes. Finally, I decided to go with TheFresh20.com
This website gives 5 recipes a week using 20 ingredients! Now, how could I go wrong!?
This one is Black Bean and Rice Skillet.
Ingredients:
2 cups of cooked brown rice
1/2 red onion
4 medium carrots, peeled and cut into 1/2" slices
1 red bell pepper, diced.
Mixed with spices, and saute'd just right made for an absolutely DELICIOUS dish!
The only problem, is that I keep forgetting that the recipe serves 2 or 4, depending on the recipe and sometimes, when I finish the preparations, there isn't quite enough.
Also, when I only shop for the ingredients in the recipes, I forget that there are also 2 other meals each day and I keep forgetting to add those things to the shopping list.
