What 5-year olds DON'T like

Day 45 (part 2)

At the school my children attend, students bring in healthy snacks each day for a week, rotating over the course of the school year.

Yesterday, 80 apple slices were a HIT! No leftovers!


Today, sadly, though the students enjoyed the carrots, the kids DIDN'T really like the Kale chips...hmmmm. My son said yesterday, "No way. The kids are NOT going to like these." I said, "Sure they will! They are like potato chips, only healthy."

Day 45

So, I've figured out how to keep the youngest kid happy while I'm trying to cook and get ready dinner.

The Plan: Plan to make cookies...then, while I'm busy fixing dinner...

(healthy ones, of course--without eggs, so the kids
can eat the batter without worries)
 


So, some moms might be quite disturbed that I was feeding my kids cookie batter before dinner, but I look at it this way: You can either eat your dinner before dessert or after. When the kids are finished eating their diner they will be too full for dessert!

By the way, I successfully made a chicken pot pie with a 'No-roll crust' which was absolutely divine! I think I have a new favorite dinner recipe.

Cooked chicken pieces
2 bags frozen mixed vegetables
1 container of organic mushroom soup (it doesn't have MSG)  :)
A little milk to add to the moisture of the 'filling'

Crust:
2 1/2 cups of flour (whole wheat worked quite well actually)
1/2 cup butter (you can use olive oil, but that flavors the crust significantly and some people don't like the flavor)
1/2 tsp salt
2 Tbs sugar (we used organic, but you certainly don't have to)

Mix and then press into a pan (no rolling needed)

If the chicken is cooked already, you only have to warm...if the chicken isn't cooked...well, I've never made it that way so I can't tell you...but I BET it's a LONG time...and my kids can't wait that long.

By the way, the cookies were divine. My kids and the neighbor kids even asked for seconds!
