Sensible Summer Snacks - ENERGY BITES

This summer, I am supplementing our summer snacks with some sensible snacks that are easy to make and that the kids like too. (No sense in trying to snack healthier if I’m not encouraging the kids to be healthier too.)

Energy bites. There are lots of recipes you can google. I’ve tried many of them. My favorite recipe is inspired by @AllRecipes.com below. It’s been tweaked a bit to fit our family’s tastes. But we’ve also made these for family parties and social occasions (once for over 500 people and not a single one was left!). My recommendation is that you try it and then make adjustments to fit your tastes.

ENERGY BITES
INGREDIENTS
2 cups rolled oats
1 cup mini semi-sweet chocolate chips (or carob chips)
1 cup ground flax meal
1 cup crunchy peanut butter (I use organic here...peanuts are heavily sprayed—also, you can use
       smooth peanut butter. It doesn’t have to be crunchy)
2/3 cup honey (or agave nectar—if you substitute here, decrease to 1/2 cup)
2 tsp vanilla extract
(If too dry, add a Tablespoon of PURE maple syrup)

(For fun, and added flavor, you can add 1 cup unsweetened toasted coconut to the mix—just add when it’s cool, otherwise it melts the chocolate chips).

DIRECTIONS:
mix all liquid/wet ingredients
Mix all dry ingredients together and then add to wet
Stir in well. You may need to use your hands here. Stirring evening is rather challenging. We use our hands to both mix and form the energy bites. You could use a small scoop.
