So, I've figured out how to keep the youngest kid happy while I'm trying to cook and get ready dinner.
The Plan: Plan to make cookies...then, while I'm busy fixing dinner...

So, some moms might be quite disturbed that I was feeding my kids cookie batter before dinner, but I look at it this way: You can either eat your dinner before dessert or after. When the kids are finished eating their diner they will be too full for dessert!
By the way, I successfully made a chicken pot pie with a 'No-roll crust' which was absolutely divine! I think I have a new favorite dinner recipe.
Cooked chicken pieces
2 bags frozen mixed vegetables
1 container of organic mushroom soup (it doesn't have MSG) :)
A little milk to add to the moisture of the 'filling'
Crust:
2 1/2 cups of flour (whole wheat worked quite well actually)
1/2 cup butter (you can use olive oil, but that flavors the crust significantly and some people don't like the flavor)
1/2 tsp salt
2 Tbs sugar (we used organic, but you certainly don't have to)
Mix and then press into a pan (no rolling needed)
If the chicken is cooked already, you only have to warm...if the chicken isn't cooked...well, I've never made it that way so I can't tell you...but I BET it's a LONG time...and my kids can't wait that long.
By the way, the cookies were divine. My kids and the neighbor kids even asked for seconds!
