Back to the potato salad:
I boiled the potatoes too long, though I checked them multiple times to see if I should remove them from the heat.
By the time I skinned them, I had a mixture of 80% mashed 20% cubed potato pieces. Then I had to stir in the other ingredients...90% mashed 10% potato pieces. By the time I remembered the parsley, I decided not to add it, simply because any more stirring would have created a potato-salad-tasting-mashed-potato-dish.
To add insult to injury, the only one home to try my creation was my youngest. So, I set him in his chair...
So, he gave it back...
